Serve with creamy but light mashed potatoes withroasted garlic and basil and a fresh salad. I made a saladwith a mix of cherry tomatoes, briefly blanched green beans, rocket, basil and a dressing of balsamic vinegar and olive oil
Season with some salt & pepper and put some mayonaise androasted pine nuts on top. But when it's really hectic with work I sometimes just can't find the time to eat a saladand then I tend to just grap a sandwich for lunch (eating salads just takes longer then eating a sandwhich)
Season chickenwith salt and pepper. Combine all the ingredients together in a large bowl using your hands to mix well then arrange everything onto the prepared baking sheets spread out in a single layer
Toss the sweet potatoes with the olive oil, pepper and a bit of salt. As of late I eat a lot of sweet potatoes because they are simply unbelievably delicious, especially combined with coconut oil or olive oil
Since there is a small babygirl on her way, who needs regularity and routine, I thought it would be wise to start planning ahead again (because I always do it for a few weeks and then it slowly fades away…)
